Chicken with Coconut Rice

If the veggies are chopped , the chicken is popped in an easy yoghurt marinade, and delicious coconut rice is already cooked, this delicious dinner can be a five minute fast food!

Top Tips

Chop veggies – as you are cleaning up from previous nights dinner, or even better, chopping and prep veggies when you restock the fridge – this is my favourite hack for every meal! Fast marinade – herbs mixed in with natural yoghurt – whatever type you have handy. (Some dried herbs and spices need warming thru to release their flavours like coriander, fennel, cumin seeds, cardamom pods or star anise; fresh herbs I just chuck right in!)

Throw the meat in the marinade, cover and refrigerate.Coconut rice – sooo delicious! Cook in advance and keep in the fridge or you an even cook a big batch and freeze it in portions! It’s a fab food for supporting your all important microbiome. Once cooked and cooled, rice becomes a ‘resistant starch’ just perfect for a belly bug smorgasbord!


Pop some oil in the pan, add in the onion, garlic and ginger, give them a minute to warm up to each other 😉
Add in the meat and get some colour on it; remember colour = flavour
Add in Veggies, dense ones first, quick cookers next, then leafy greens. Need more flavour? Add a slurp of some or all of these- coconut aminos, GF soy, sesame oil, and/or fish sauce.

So let’s tick the boxes – protein✅ good fats✅ and fibre✅

Coconut Rice recipe

Equal parts coconut cream, rice and water! I put some cardoman pods, star anise, cumin and Coriander seeds in a pan and heat gently and release those beautiful flavours. Add in a whole can of coconut cream. Fill the empty can with water, add to the cream. Fill the can again with rice, rinse thoroughly in a colander and add to the cream, herb and water mix. Pop lid on Simmer for 10 – 15 mins. Leave lid on to fully absorb moisture. Serve or store in the fridge until needed, any extras pop in the freezer!
