Green Goddess Dressing

Make yourself a creamy ‘green goddess dressing’. It has the texture of silk and a taste of freshness that lifts any dish to the next level!!

1/2 cup cashews – blitz till ground finely
1 inch of ginger peeled
1/2 an avocado
Juice of 1/2 a lemon
2 tablespoons of apple cider vinegar
6 tablespoons of olive oil
1 heaped teaspoons honey
A bunch of basil leaves
A bunch of coriander leaves
1/2 a chilli
1 tablespoon of coconut yoghurt/natural yoghurt

Season with salt and pepper
Use as a delicious dip Or add a little water until it’s smooth and pourable and it’s a dressing! Keep the extras in the fridge and use within a few days.

Yes there’s a heap of ingredients but the basics to a good dressing are always the same. Remember… 3 parts oil to one part acid. 😋 Don’t be afraid to put your own spin on it – use what you have handy!

And for bonus points…
• plenty of fibre
• good healthy fats
• ACV and lemon to aid digestion
• Ginger to calm, reduce gas and inflammation
•coriander and basil both aid digestion and are anti-inflammatory
•yoghurt for a probiotic hit
