Hidden Liver Meatballs

Gram for gram, liver is one of the most nutrient dense foods you can eat! High protein , easy to absorb iron, all of the B vitamins, vitamin A, many trace elements, essential fatty acids, as well as the powerful antioxidant CoQ10.
My kids favourite excuse why they shouldn’t eat liver – Mum … why would I eat THAT when it has been filtering toxic crap for something else???🤨🤨Yes, it is a filter for toxins but it is not a storage place for them so, sorry guys god try, but that’s not a valid one! So Mums … just hide the liver in foods and make it taste great. They will never even know😉 the benefits to our energy levels, mental health and more are undeniable.
No need for full disclosure , you are doing the cooking and responsible for getting those nutrient dense foods on your family’s plate – liver is an economical and easy to use food we have just forgotten how to use it.


Make sure the liver is fresh not swimming in blood – ask your butcher how fresh it is. Lamb liver is a lighter flavour than beef liver. Try and source grass fed.

Soak in milk for 30 mins before cooking if you just dont like the smell. Chop finely and mix with other meats. You can slice finely and sauté lightly- but be careful not to overcook as it will become tough very quickly!

The meatballs in this recipe are:
200g liver chopped
500g mince (beef used in these ones)
1 onion and some garlic chopped and fried
1 egg
1 tablespoon of psyllium husk
grated carrot and lemon rind, salt, pepper and as many herbs fresh or dried as you like ❤️

Roll tablespoons of mix into balls and cook in a pan or here I used my airfryer. Some went into the fridge for grab-able snacks and the rest in the freezer. Quick, easy, delicious and power packed!
