Does anyone else remember rice pudding???
Easy to make, uses up your leftover rice, absolutely delicious!
1 cup coconut cream
1 cup almond or coconut milk ( what ever you have at hand! )
1/4 cup maple syrup – or sweetener of choice
2 eggs
A handful of sultanas or whatever dried fruit you have
1/2 teas Cinnamon
1 teas vanilla Beat these together
Stir in 1 cup of leftover cooked rice
Bake in a water bath @ 160 degrees until just firm. Mine is served up with fermented peaches
